But what about Provence, an area in southeastern France where rosé has been arguably made for 26 centuries? It makes rosé wine because that’s what works best. Very pale salmon color. A breezy, windswept savory nose that tantalizes rather than overwhelms. Citrus and stone fruit emerge with airing along with a touch of pepper and mint. Flavors are dry and bracing like a splash of lemon. Big cherry elements give body before the grippy acids take hold. It’s a very mercurial drink – flashy, fleeting and alive. A perfect choice for the simple seafood dishes of the nearby Mediterranean. (A blend of Cinsault and Grenache with small parts Rolle, Syrah, Mourvedre and Tibouren) Drink now-2018.
