Executive Chef RJ St. John works the fryers in Mama’s Hot Chicken food truck, slated to hit the streets of Durham April 15. The chef of the James Joyce Irish Pub, RJ has been testing out recipes for his Nashville-style hot chicken and serving them as specials at the Joyce. The plan is for the truck to be on the road for about year before transitioning into a brick-and-mortar location.
Mama’s Hot Chicken is utilizing breasts from Joyce Farms’ free-range chicken, coated with a seasoning mix that will hit four different heat levels. The chicken is served with spicy, house-made pickles atop a slice of white bread, and will come with sides like coleslaw, fries and hushpuppies.
Warmer temps = the perfect opportunity to work outside of Cocoa Cinnamon with an iced vanilla latte.
