BCBB house made pork pâté on our burger bun crackers with chow-chow

First Course
Pickled Parts: pickled trotters, pickled pork tongue, pickled pork skin and purple eggs
with pickled vegetables and spicy beer mustard

Second Course
Salad of pea shoots and baby greens with pickled watermelon rind, bacon bits, blue cheese and spiced pecans
with mustard and smoked vinaigrette dressing

Third Course
Savory southern-fried hand pies stuffed with pulled pork and local veggies served with green cabbage
with red onion confit salad and green salsa

Fourth Course
Slow cooked BBQ pork spare ribs with a bourbon, habanero, cilantro sauce and sweet corn on the cob
with hand-churned butter and sea salt

Warm southern-style peach cobbler with a scoop of vanilla and lavender ice-cream
